The definition of what’s “dinner” has evolved over the past few decades. If I had to do a shout-out to my favorite recipe in this bunch, it’s hands down our healthy take on waffles. We loaded it up with good-for-you ingredients such as lentils, brown rice, and probiotic powder, and then we shared a tip about how to freeze leftovers and toast them up right out of the freezer. For me, when our waffle is crispy and hot, a spoonful of peanut butter and a little dollop of vanilla ice cream is all you need for a quick and incredible sweet sensation.
